About Sculpin / Scorpionfish

There are 40 species in California waters, and the sculpin are continually gaining notoriety as a very tasty fish. The one drawback is handling this fish due to the thorns, but that is not a problem when purchased at the Dory Fleet fish market. Due to the diet of the sculpin (smaller fish, shrimp, small crabs and octopus), the sculpin cooks up white and firm with a juicy texture. Its flavor is sweet and mild, similar to cod rock cod or haddock yet still unique.

Cooking

Sculpin may be grilled, fried, baked or broiled. The flavor is mild and the texture is firm.
